We use Gin-san(Gingami No.3)steel, which is a highly rust resistant steel developed by Hitachi Metals, Ltd. through their refining process that still uses Japan's time-honored metal working and tatara fumace smelting techniques.
Of the Gingami metals, which have carbon added to 12-14% chrome, Gin-san contains even greater carbon content for a harder steel.
Experts craftsmen spend long hours and use careful techniques to craft each blade. Since the metal is especially hard, the knives hold their edge for a long time and do not rust easily.
Top grade timber from the evergreen coniferous trees found in the mountainous regions of Hokkaido to Kyushu is used for the blade. This type of wood is also used for various crafts such as ittobori’(literally, ‘one knife’) wood carving and shaku scepter in the Hida region, as well as table tops and pencils. The features that set this wood apart from other materials are its fine wood grain, glossy luster and beautiful color tone that become more intense with age.

This Japanese petit knife is a mixed designed of Japanese and Western style;
with a Japanese knife-style handle and a single-material blade, designed for Japanese
cuisine chefs to comfortably handle along with a touch of traditional Japanese 'wa' in its style.
It is suitable for delicate works, such as peeling, thin-slices, and mincing of vegetables.

It is far less prone to rust than steel, but requires careful maintenance since acid and salt left in place can lead to rust.
