Steel Material
Forged from Yasugi white steel (Shirko#2) that is a standard for ferrite steel and cutlery steel, this knife is easy to sharpen and great for sashimi (also known as Syobu or Yanagi-ba knife).White steel is a type of high purity steel from which impurities have been removed. A highly-skilled craftsman takes more time and effort to forge and quench as compared to conventional white steel, resulting in a dramatically improved cutting performance.
