Forged from Yasugi white steel (Shirko#2) that is a standard for ferrite steel and cutlery steel, this knife is easy to sharpen and is perfect for sashimi (also known as Syobu or Yanagi-ba knife).White steel is a type of high purity steel from which impurities have been removed.The White Steel Kasumi Yanagi Knife is forged by a highly-skilled craftsman.

Handle

Wood of the deciduous tall Magnoliaceae tree that is grown in forests around Japan is used to craft the handle.Being light and soft, this type of wood can be processed very easily. Besides being used to produce knife handles and sheath, Magnoliaceae wood is also widely used as a material for sculpture, lacquerware, furniture, musical instrument and more.

It is used for a wide range of applications such as peeling vegetables, mincing, cutting, scraping and so on.
The blade is almost straight from heel to the cutting edge.
This is also known as the square tip, Eastern-style or Edo-style knife.
